The Terroir

Altitude is
the whole story.

Santiago de María sits in the Tecapa–Chinameca range, a corridor of dormant volcanoes in eastern El Salvador. The soil here is young andisol — mineral-dense, free-draining, and startlingly fertile.

At this elevation the cherry ripens slowly. Slow ripening means denser beans, more concentrated sugars, and the layered acidity that defines a true Strictly High Grown lot.

We buy directly from growers in Santiago de María, selecting lots by cup score rather than by volume. Every lot is traceable to the finca.

Roasted in the U.S.

The green arrives by sea and rests in our warehouse. We roast in small batches to order, so coffee ships days after roasting — never months.

Our Origin

The name means
summit.

In El Salvador, la cumbre is the ridge where the coffee stops and the cloud forest begins — the highest ground a farmer can plant, and the ground that produces the finest cup.

Our first container is a small one, and deliberately so. We would rather bring in four exceptional lots than forty ordinary ones. Each is roasted here in the States, on our own schedule, to a profile developed for that specific harvest.
